Culinary Arts I Class Syllabus 2008
What is Culinary Arts?
In this class you will learn food preparation skills that will enable you to
work in commercial food service establishments. The topics will include:
food preparation skills, catering, table service, and SERV SAFE. You may
elect to take the SERV SAFE test for certification. It is optional, but is a
great benefit in acquiring a job in Food Service. Part of your time will be
spent in class doing hands-on activities and bookwork. The other part will
be as an intern working out in local food service establishments.
Transportation to and from these job sites will be provided for you by the
New Hanover County Schools’ bus system. You will be in class for 2 blocks
each day (3 hours) and receive 2 credits at the end of the first semester.
Grades will be based on the following:
Restaurant work
Test/quizzes
Professional behavior/daily work
Portfolio
Appropriate dress for restaurant work and class lab: Close toed shoes,
minimum jewelry, head covering and chef jacket (provided if required by
restaurant) or apron. You must wear disposable gloves if you choose to wear
long painted fingernails. The chef jacket will be your responsibility to keep
clean. Failure to dress appropriately will result in points removed from
your professional behavior grade that day.
Attendance:
Good attendance is mandatory because a lot of material is going to be covered
in a short period of time and it is imperative that all students are present
for this. Make-up work will only be allowed for excused absences. For
excused absences on restaurant days, you may choose from a list of make up
work options. Unexcused absences result in a 0.
Lab:
In order to participate in lab, you must pass a safety/sanitation test with a
score of 77 or better. You may retake the test as often as necessary.
I have read this syllabus and understand that it is my responsibility to make
up work missed. I understand that if I have an unexcused absence or show up
inappropriately dressed that I will receive a 0 in the grade book for that
day.
