Recipes

                      Waldorf Salad

4-5 red apples

1/4 cup raisins

1/4 cup orange juice

6 ounces plain or vanilla yogurt

Optional: walnuts or pecans, chopped

1. Wash apples really well, then cut into quarters and remove stems and cores 
or use corer/slicer.

2. Leave apple skin on ; cut into small pieces on cutting board. 

3.Put apple pieces, into bowl and sprinkle raisins and nuts over apples.

4. Coat apples thoroughly with orange juice to prevent browning.

5. Stir in yogurt and chill if desired.
 
**Good for Thanksgiving
***Use red and green apples for Christmas

                      Spring Wrap

Tortilla, any size or flavor

Deli turkey breast

Baby spinach leaves

Dried sweetened cranberries

Flavored cream cheese, Garden Vegetable or Onion Chive


1. Place tortilla on cutting board or other clean surface

2. Spread a thin layer of cream cheese to edge of tortilla

3. Place desired amount of turkey on tortilla

4. Cover turkey with spinach leaves

5. Sprinkle cranberries over spinach

6. Roll filled tortilla tightly into a tube

7. Wrap in plastic wrap and chill

8. Cut into desired size pieces

***Some young children prefer the stems removed from the spinach

                       Easy Egg Drop Soup


1 - 14 oz. can chicken broth

1 egg, beaten

1 scallion


1. Break egg into a small bowl and beat with fork

2. Wash scallion and cut green ends into 1/2" pieces

3. Heat broth to boiling - Use back burner for safety purposes

4. Turn heat off and carefully move pot to a cool burner ( Not counter!!) 

5. Add egg to broth and wait 3 seconds before stirring gently with a fork

6. Add desired amount of scallions


Serves 2

                        Cupcake Cheesecakes  

12 vanilla wafers

2 - 8 ounce packages cream cheese, softened  

1/2 cup sugar

1 teaspoon vanilla extract

2 eggs


1. Pre-heat oven to 325*

2. Line 12 muffin cups with paper or foil liners 

3. Place one vanilla wafer in each liner

4. Allow cream cheese to soften at room temperature or beat with mixer until  
creamy   * IMPORTANT STEP *

5. Mix cream cheese, sugar and vanilla on medium speed until well blended

6. Add eggs and mix well

7. Evenly fill 12 muffin cups with mixture

8. Place muffin pan in center of oven and bake for 25 minutes

9. Cool cheesecakes then store covered in refrigerator up to 1 week

10.If desired, top with pie filling, fruit, nuts or chocolate

                       Tortilla Crisps

flour tortillas

soft margarine

sugar

cinnamon


1. Preheat oven to 400*

2. Line baking sheet with foil

3. Spray foil with cooking oil

4. Place 2 tortillas on foil and spread margarine to edges

5. In a small bowl, mix 2 scant Tablespoons sugar with desired amount of 
cinnamon

6. Sprinkle mixture over tortillas

7. Bake until tortillas bubble ( turn on oven light to check this )

8. Use oven mits to remove hot baking sheet

9. BE SURE TO PLACE SHEET ON SAFE SURFACE

10. Use pizza wheel to cut into wedges



Great way to use leftover tortillas!

                           Doo Dads


square waffle pretzels

candy melts or chocolate candy kisses

M&Ms


1. Preheat oven to 350*.

2. Line baking sheet with foil.

3. Place 12-18 pretzels on sheet.

4. Center any flavor candy melt or kiss on top of pretzels.

5. Leave in oven for 1-2 minutes or until chocolate softens.

6. Press an M&M down into the softened chocolate.

7. Allow to cool and harden.

                         Fiesta Dip


1 cup light or non-fat sour cream

1 cup medium salsa

8 ounces sharp cheddar, regular shredded


1. In medium size bowl, combine sour cream and salsa.

2. Add cheese and mix well.

3. Chill then serve with favorite tortilla chips or Scoops.

                    Strawberry Fruit Dip


1  8 ounce bar light cream cheese,softened

7-8  ounce container marshmallow cream


1. In large bowl, beat cream cheese until smooth.

2. Add marshmallow cream and mix until well blended.

3. Serve with whole strawberries as well as other fruits.

4. Stores well in refrigerator for several days.

                     Banana Fanana Foster

1/4 cup butter, melted

1/4 cup light or dark brown sugar, packed

1/4 teaspoon cinnamon

1/2 teaspoon vanilla

2  teaspoons water


2 ripe & firm bananas
Vanilla ice cream

1. Melt butter on low heat in large skillet.

2. Add brown sugar, cinnamon, vanilla and water.

3. Cook and stir constantly until well blended.

4. Peel, then slice bananas lengthwise and crosswise into 4 pieces.

5. Add bananas to skillet and cook until warm and coated with mixture.

5. Serve over ice cream.
