Important Nutrients of Whole Grain

Chef Mary emphasizes the importance of whole grains for all the nutrients they provide. Carbohydrates, which are the body's main fuel, give you energy to move and groove each day. To keep breathing and thinking you need a constant supply of carbohydrates to the brain, heart and nervous system. The B complex vitamins help you use energy from the food you eat. Whole grains provide trace minerals like iron, zinc, and copper. Enriched grains are fortified with folic acid which helps to reduce birth defects. The benefits of a diet high in fiber include reduced blood cholesterol and a reduced risk for heart disease. Fiber also keeps you regular.

Olive Oil's Health Benefits

Olive oil is the only vegetable oil that can be consumed as it it--freshly pressed from the fruit. Studies have shown that olive oil offers protectin against heart disease b controlling LDL ("bad") cholesterol levels while raising HDL (the "good" cholesterol) levels. No other naturally produces oil has as large an amoung of monounsaturated as olive oil--mainly oleic acid. Olive oil is very well tolerated by the stomach.

Types of Olive Oil

Extra virgin--considered the best, least processed, comprising the oil from the first pressing of the olives.

Virgin--from the second pressing.

Pure--undergoes some processing such as filtering and refining.

Extra light--undergoes considerable processing.

History of Pasta

Nothing says Italy like its food, and nothing says Italian food like pasta. Wherever Italians have immigrated they have brought their pasta. Today it is basically an international staple. Unlike other ubiquitous Italian foods like Pizza and tomato sauce, which have a fairly recent history, pasta may indeed have a much older pedigree going back hundreds of years.
