Chewy Cocoa Brownies
Ingredients:
1 2/3 cups Granulated Sugar
3/4 cup (1 1/2 sticks) butter or margarine, melt in Microwave for 1 Minute!
2 Tbsp. water
2 Large Eggs
1 tsp. vanilla extract
1 1/3 cups all-purpose flour
3/4 cup NESTLE TOLL HOUSE Baking Cocoa
1/2 tsp. baking powder
1/4 tsp. salt
Directions:
1. PREHEAT oven to 350oF. Grease 13x9-inch baking pan.
2. COMBINE sugar, Melted Butter and water in a large bowl. Stir in eggs and vanilla extract.
3. COMBINE flour, cocoa, baking powder, and salt in a medium bowl; stir into the sugar mixture.
4. Spread into the baking pan.
5. BAKE for 18 to 20 minutes or until wooden pick inserted in center comes out slightly sticky.
Yovana's Basic Cornbread
Ingredients:
1 1/4 cups all-purpose flour
3/4 cup of cornmeal
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup milk
1/4 cup vegitable oil
1 egg beaten
Directions:
Preheat oven to 400o
Grease a one to nine inch pan.
Combine dry ingredients.
Stir in milk, oil, and egg, mixing until dry ingredients are moist.
Pour batter into prepared pan.
Bake for twenty to twenty-five minutes, or until golden brown.
Insert toothpick into center, if it comes out clean you're done.
Flour Tortillas
Ingredients:
1 1/2 cup flour
1/2 tsp. baking powder
1/2 tsp. salt
1/4 cup shortening
1/2 cup hot water
Directions:
Add flour, baking powder and salt.
Cut in shortening (do not overwork dough).
Slowly add water to form a soft ball.
Cover with damp cloth and let rest 10 minutes.
Shape dough into 6 balls.
Using a rolling pin to shape the balls into circles and fry in an iron skillet.

Snicker doodles
Ingredients:
1 1/2 cup Sugar
1/2 cup butter <----- Mix these three
2 eggs

2 3/4 cup flour
2 tsp. cream of Tatar
1 tsp. baking soda
1/2 tsp. salt
Directions:
1. HEAT oven to 400o.
2. Mix 1 1/2 cups sugar, the butter, shortening, and eggs in a large bowl.
3. Stir in flour, cream of tartar, baking soda and salt.
4. SHAPE dough by rounded teaspoons into balls.
5. Mix 3 tablespoons sugar and the cinnamon; roll balls in mixer.
6. Place about 2 inches apart on ungreased cookie sheet.
7. BAKE 8 to 10 minutes or until set.
8. Immediately remove from cookie sheet.
9. Cool completely on wire rack.
Apple Pies
Ingredients for apples:
1/4 cup of sugar
1 tbsp. cinnamon sugar
1 tsp. water
1 tbsp of butter (cut into 5 pieces)
Ingredients for pie crust:
1 cup of flour
1/4 tsp. sugar
1/4 tsp. cinnamon
1/4 tsp. salt
1/2 tsp. sugar
1/3 cup shortening
add 4 tbsp. ice water
(FORM 5 BALLS!!)
Directions:
1. Roll out dough with flour on the table with rolling pins.
2. Put flattened dough on cookie sheet.
3. Place a medium amount of apples in the middle of the dough (staying clear of the edges).
4. Place a piece of butter in the middle of the apple mixture in the dough.
5. Brush a little water around the edges of the dough to seal.
6. Fold over and seal together.
7. Use a fork to poke 2 small holes in the top of the pie.
8. Use the fork to press around the edges of the pie for design.
9. Place in the oven at 350oF (convectional) and cook for aboot 10 minutes.
10. Stay and watch your pies while they cook.
Mexican Wedding Cookies (Yields 24 cookies)
Ingredients:
Powdered Suger: 3/4 Cup (Set aside for rolling cookies)
Butter: 1/2 Cup
Almond Extract: 1/4 teaspoon
Vanilla Extract: 1/2 teaspoon
Powdered Sugar: 1/2 Cup
Flour: 1 Cups
Chopped Pecans: 1/4 cup
Directions:
1. Preheat oven to 350 degrees
2. Set aside 3/4 cup powdered sugar in a bowl
3. Cream butter, almond extract, vanilla and powdered sugar
4. Stir in flour and NUTS! until blended
5. Shape dough into 1 inch balls
6. Place on ungreased cookie sheet
7. Flatten cookies slightly
8. Bake for aboot 12 minutes
9. Remove from pan and roll in powdered sugar
10. Place on pan serving plate to cool
Rolled Sugar Cookies
Ingredients:
6 tablespoons butter
1/2 cup sugar
1 egg
1/4 tsp. vanilla
1 1/4 cups flour
1/2 tsp. baking powder
1/4 tsp. salt
Directions:
1. Cream the sugar and butter until smooth
2. Beat in eggs and vanilla
3. Stir in flour, baking powder, and salt
4. Cover and chill dough
5. Preheat oven to 350 degrees convection or 400 conventional
6. Roll dough out to 1/4 inch
7. Cut shapes and place on parchment on sheet pan
8. Bake 6 to 8 minutes
Chocolate Chip Cookies
Ingredients
- 1 1/2 sticks unsalted butter, cut into cubes
- 1/2 cup dark brown sugar, packed
- 1/2 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1 1/2 teaspoons instant espresso
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup good quality chocolate chips or chunks
Directions
Preheat oven to 350 degrees F.
In a large mixing bowl, combine cold butter, dark brown sugar, light brown sugar, granulated sugar and espresso with a hand mixer. Mix at slow speed for 30 seconds and increase speed until the mixture is fluffy, about 6 minutes. Lower the speed and add the eggs 1 at a time. Add vanilla and mix until all ingredients are incorporated. In a separate bowl, whisk together the flour, baking soda and salt. Add the flour mixture to the butter and sugar mixture in batches. Stir with a spatula until well blended. Fold in the chocolate chips or chunks and spoon the dough onto 2 parchment lined cookie sheets at least an inch apart. Bake for 14 to 15 minutes. Rotate the cookie sheet half way through so that the cookies bake evenly. Remove the cookies from the oven and transfer to a wire rack to cool.
Cheesecake
Ingredients:
1 ½ pounds ricotta cheese
16 ounces cream cheese
1 cup white sugar
6 eggs
6 tablespoons all-purpose flour
1 cup sour cream
1 teaspoon vanilla extract
Directions:
1. Preheat oven to 325 degrees F (165 degrees C.) Wrap the outside bottom of a 10 inch springform pan with foil to prevent water seeping in while baking.
2. Cream together ricotta cheese, cream cheese, and sugar until smooth. Mix in the eggs one at a time. Add flour one tablespoon at a time, mixing well. Stir in the sour cream and vanilla. Pour mixture into a 10 inch springform pan.
3. Place cheesecake in a large rectangular pan filled with 2 inches of hot water. Carefully put into preheated oven without spilling water. Bake for 90 minutes.
4. Cool on counter for 60 minutes and then refrigerate. Serve when thoroughly chilled.
Makes 1 large cheesecake or 42 small muffin cakes.
Tomato Sauce & Italian Seasoning
Yield / 4 Servings
Olive or Vegetable Oil 1 ½ TBS
Clove Garlic Chopped 6 cloves
Onion Chopped 1 ½ onion
Red Pepper Flakes 2 TBS
Italian Seasoning 1 TBS
Water 2 cups
Tomato Sauce 1 gallon
Kosher Salt 1 tsp
Pepper 1 tsp
1. In saucepan place olive oil, garlic, onion, red pepper, Italian Seasoning
2. Cook over medium heat for 5 minutes or until the garlic starts to turn brown
Put tomatoes and water in stock pot
3. Add seasonings to tomatoes
4. Season the tomato sauce with the salt, pepper
5. Simmer for 30 more minutes
Mir's Hummus
Prep Time: 15 Minutes
Total Time: 15 Minutes
Serving size: 4
Ingredients:
· 16 oz can of chickpeas or garbanzo beans
· liquid from chickpeas
· 1 lemon (for juice)
· 2 tablespoon tahini
· 2 cloves garlic
· ½ teaspoon salt
· 2 tablespoon olive oil
· 3 pieces of roasted red pepper
Preparation:
Drain chickpeas and set aside liquid from the can. Mash the chickpeas with a spoon for 1 minute. Combine the mashed chickpeas, 3 pieces of red pepper , ¼ cup of liquid from can, 1 lemon *(for juice)*, 2 TB tahini, 2 cloves of garlic, ½ tsp salt, 2 TB olive oil in blender.
Blend for 3-5 minutes. In between add enough liquid untill Hummus is viscus enough.
Place in serving bowl, and create a shallow well in the center of the hummus.
Add a small amount (1-2 TBS) of olive oil in the well. Garnish with 1 piece of roasted red pepper.
Serve immediately with fresh, warm or toasted pita bread, or cover and refrigerate.
Peppy’s Pita Bread
Ingredients:
· 1 1/8 cups warm water (110 degrees F/ 45 degrees C)
· 3 cups all-purpose flour
· 1 tsp salt
· 1 TBS vegetable oil
· 1 ½ tsp white sugar
· 1 ½ tsp active dry yeast
Directions:
1) Place all ingredients in bread pan of you bread machine, select Dough setting and start. When dough has risen long enough, machine will beep.
2) Turn dough onto a lightly floured surface. Gently roll and stretch dough into a 12 inch rope.
With a sharp knife, divide dough into 8 pieces. Roll each into a smooth ball. With a rolling pin, roll each ball into a 6 to 7 inch circle. Set aside on a lightly floured countertop. Cover with a towel. Let pitas rise about 30 minutes until slightly puffy.
3) Preheat oven to 500 degrees F (260 degrees C). Place 2 or 3 pitas on a wire cake rack. Place cake rack directly on oven rack. Bake pitas 4 to 5 minutes until puffed and tops begin to brown. Remove from oven and immediately place pitas in a sealed brown paper bag or cover them with a damp kitchen towel until soft. Once pitas are soft, either cut in half or in several pieces for the hummus.

Rolls – Chef Reed
1. Properly scale/measure ingredients
2. Mix Active Dry Yeast with water (105-115 Degrees)
3. Add sugar to the yeast mixture
4. Wait till yeast starts to form bubbles
5. Sifled flour
6. Add Flour
7. Mix for 2 mins on Low Speed w/ dough hook. You want to see the mixture come together and pull away from the sides
8. Turn the mixture back on at 40% power and mix for the 5 mins
9. Remove the dough from the mixture and knead by hand for about 30 seconds, then work the dough into a ball

Pizza Dough
Makes 1 pizza
· 1 (.25 ounce) package active dry yeast
· 1 cup warm water (110 degrees F/45 degrees C)
· 2 cups bread flour
· 2 tablespoon olive oil
· 1 teaspoon salt
· 2 tablespoons white salt
- 8 oz Mozzarella Cheese
- 4 oz Parmesan Cheese
Directions:
1) In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
2) In a large bowl, combine 2 cups bread flour, olive oil, salt, white sugar and the yeast mixture: stir well to combine. Beat well until stiff dough has formed. Cover and rise until doubled in volume, about 30 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
3) Turn dough out onto a well floured surface. Form dough into a round and roll out into desired pizza crust shape. Cover with the sauce, toppings, and cheese. Now bake in preheated oven un till golden brown, about 20 minutes.
Pizza Sauce
Makes 1 pizza
· 2 ripe tomatoes
· 1 clove garlic
· 1 tablespoon chopped fresh basil
· 1 pinch ground cinnamon
· 1 teaspoon salt
· 1 pinch ground black pepper
· ¼ teaspoon white sugar
· 1 teaspoon dried oregano
· 2 tablespoon olive oil
· 1 teaspoon chopped fresh parsley
Directions:
1) In a food processor, combine the tomatoes, garlic, basil, cinnamon, salt, pepper, sugar, oregano, oil, and parsley. Blend without liquefying – should remain a little chunky.

¼ Cup of Tomato Sauce
4 Cloves Garlic
2 tbsp Cilantro
1 stick room temp Butter
4 tbsp milk
2 tsp Chipotle sauce & 1 chili
½ tsp sugar
Mix in processor and serve with warm french bread
